Tabi is still a relatively new variety that is almost exclusively cultivated in Colombia. This is our first time working with this variety from the terroir of Nariño. In the cup we find cherry, cacao, and pink grapefruit.

Hand-picked at peak ripeness. Floated to further remove defects. Depulped. Dry-fermented for 24 hours. Washed. Dried on raised beds for 15 days.

ABOUT JORGE CORTES

Jorge Cortes is part of a new project we started this year to help gain better access to coffees from Nariño. Because of its remote location and lack of infrastructure, this special place remains extremely challenging to work. In addition to increasing quality and prices for the small-scale producers in this area, this project also opens up opportunities to explore different varieties grown in this microclimate.

ABOUT TABI

Developed in 2002, Tabi is a newer hybrid to the scene. It is a cross between Bourbon, Typica, and Timor Hybrid, and the result of research to create a disease-resistant variety that maintains high cup quality potential. For this reason, it has quickly become our favorite hybrid variety.
