This lot comes from the second harvest pass at Sierra Morena this season. It is bright, crisp, and sweet, with pointed lemonade-like acidity, excellent berry complexity, and floral transparency.

Hand-picked at peak ripeness. Floated. De-pulped. Dry-fermented for 24 hours. Dried on raised beds for 30 days until moisture content reaches 10.3%.
Wilson Alba has spent the last 15 years living and working alongside his brother Jose (whose coffee we have also purchased) on their farm, Sierra Morena. The farm spans eight hectares (~20 acres), with two hectares planted in Pink Bourbon and the remainder in Tabi. Sierra Morena consistently produces some of the finest Pink Bourbon we taste from southern Huila. It is a privilege to roast and work with their exceptional coffees.
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
