Fabian Munoz is a new producer to our project in southern Huila. As much as we try to purchase coffee from the same producers year after year, it is always exciting to discover new producers each season. In the cup we find ripe strawberry, pink grapefruit, and rose hips.

Hand-picked at peak ripeness. Floated. De-pulped. Dry-fermented for 48 hours. Dried on raised beds for 30 days until moisture content reaches 10%.
We were introduced to Fabian Muñoz’s coffee this year through Jose and the Osito team in southern Huila. This ongoing project focuses on increasing payments based on quality, a question we set out to explore several years ago. The results have been clear—not only has coffee quality improved, but we’ve also had the chance to meet incredible producers along the way. Fabian is one of the latest, and we are excited to share his coffee as this project continues to grow.
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
