This lot comes from the third harvest pass at Sierra Morena this season. It is bright, crisp, and sweet, with pointed lemonade-like acidity, red currant, and hibiscus.

Hand-picked at peak ripeness. Floated. De-pulped. Dry-fermented for 24 hours. Dried on raised beds for 30 days until moisture content reaches 10.3%.
For the past 15 years, Wilson Alba has lived and worked with his brother Jose (whose coffee we have also purchased) on their farm, Sierra Morena. Spanning eight hectares (~20 acres), the farm is planted with two hectares of Pink Bourbon and the rest in Tabi. Sierra Morena consistently produces some of the finest Pink Bourbon we taste from southern Huila, and it is an honor to roast and share their exceptional coffees.
Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
The cost of getting a coffee from cherry to beverage varies enormously depending on its place of origin and the location of its consumption. The inclusion of price transparency is a starting point to inform broader conversation around the true costs of production and the sustainability of specialty coffee as a whole.
