Our first coffee from the Galindez family immediately impressed us with its level of expression and complexity. In the cup we find a Kenya-like profile of blackcurrant, rose hips, and pomegranate.

Hand-picked at peak ripeness. Floated to further remove defects. Held in cherry for 24 hours. Depulped. Dry-fermented for 35 hours. Dried on raised beds for 30 days.

ABOUT ARLES JAIR GALINDEZ

Arles is a new producer that we met through our Pink Bourbon buying project in southern Huila. This year has easily been our most successful year in this region, with the introduction of a higher-paying incentive structure based on quality. We look forward to meeting the Galindez family during our next trip to Colombia in the fall!

ABOUT PINK BOURBON

Pink Bourbon is a relatively new variety being grown primarily in and around Huila, Colombia. The variety has been identified genetically as an Ethiopian Landrace, but unfortunately, we cannot be any more specific as to its origins until there is a larger genetic database.
